What to eat and drink in Bali

Classes here usually build the menu around local dishes. Ones to look for:

Babi guling
Balinese spit-roast suckling pig rubbed with turmeric and spices, served with crackling and rice.
Nasi goreng
Fried rice with sweet soy, shallots and chilli, often topped with a fried egg.
Bebek betutu
Duck stuffed with Balinese spice paste, wrapped in banana leaves and slow-cooked.
Lawar
A Balinese mix of chopped vegetables, coconut, minced meat and spices.
Sate
Balinese skewers; sate lilit is minced fish or meat pressed onto lemongrass sticks.
Nasi campur
Rice with small portions of several dishes, such as meat, vegetables, egg and sambal.
Mie goreng
Fried noodles with vegetables, egg and sweet soy sauce.

How to pick a good cooking class

  1. Check whether you cook every dish yourself or watch a demonstration. Hands-on classes usually cap groups at 10 to 12.
  2. Morning classes often start with a market walk to buy ingredients; afternoon ones go straight to the kitchen.
  3. Tell the host about allergies or a vegetarian diet when you book, not on the day.
  4. Look for a class that sends the recipes home with you, so you can cook them again.
